Cous cous salad

Ingredients

1 cup cooked cooled cous cous

I tomato diced

1 bell pepper minced

½ cucumber diced fine

½ cup sweet corn

½ cup cooked chickpeas

½ cup minced fresh parsley and mint

Dressing

4 tablespoons olive oil

3 tablespoons lemon juice

½ tsp cumin powder

½ tsp paprika powder

½ tsp cinnamon powder

Salt to taste

Method

Whip up the dressing in a large bowl and then throw in the rest of the ingredients. Mix well. Chill and put in your Tucker Tin.
