Lemon Rice


1 cup rice

½ lemon juiced

1 medium sized onion minced

1 cm piece of fresh ginger grated

1 tsp turmeric powder

1 tsp black mustard seeds

1 tsp cumin seeds

½ cup pumpkin or sunflower seeds

Fresh coriander to garnish




  1. Cook rice, fork and set aside to cool down completely.
  2. In a pan heat 3 tablespoons of oil. Splutter mustard seeds and cumin in the hot oil, turn down the heat and immediately throw in the pumpkin or sunflower seeds. Toast them for 30 seconds or so and now add you onions and grated ginger. Saute till onions are translucent on low heat. Now add turmeric powder and salt to taste. 
  3. Empty the entire contents of the pan into the rice, pour in the lemon juice and mix well.
  4. You are now ready to eat or pack into your eco friendly Tucker Tin lunch box for on the go!
