Mild or Hot Madras Curry
Ingredients
In your spice kit you have:
Cumin powder
Corriander powder
Fennel powder
Black mustard seed powder
Black pepper
Fenugreek powder
Tumeric powder
Ground curry leaves
Chilli Powder (very little in the Mild version)
You will need the following ingredients:
1 tbs vegetable oil
1 tsp chopped garlic
1 tsp chopped ginger
1 large onion
1/2 cup of coconut cream - more if you like a creamy mild curry
1 cup of water
Meat of choice - about 500g
Directions
Cut your meat to bite sizes.
Mix half the curry mix in your packet with the vegetable oil. Add to the meat and coat well. Set aside for 20 minutes to marinate.
Dice the onion and fry in a little ooil till golden brown. Add the ginger and garlic and fry for 1 minute.
Add the mixture to a frying pan and stir it constantly so it doesn't catch and burn the spices. When the meat is browned all over, add a cup of water and simmer till the meant is tender. Add salt to taste.
Add in the coconut cream and cook on low heat for a further 5 mintues. Turn off, garnish with corriander and serve with rice or rotis.
