Zucchini fritters

 

An idea for a snack or a meal.  These fritters are a good way to have children eat more vegetables.

Ingredients

1 egg whisked lightly

1 cup of self raising flour

1/2 cup of milk

1/4 cup of oil

Optional 1/2 cup of grated cheese

1 cup of Zucchini grated.  I use my Kenwood food processor that grates in seconds. You can also use grated carrots for this recipe.

1 tsp of garlic

1 tbs of Italian mixed herbs or any herbs you fancy.

Salt and pepper to taste

Method

Mix the wet ingredients together in a large bowl.

Add the grated Zucchini and mix well.

Finally add the self raising flour and make sure it is mixed well with the wet ingredients to form a thick batter.  if your batter is too thick use a little more milk. 

Heat a frying pan with a little oil.  A trick I use is to fill a small bowl with some oil and use a paper towel to dip it in the oil and wipe the frying pan.  This means I don't use an excessive amount of oil and the fritters don't stick to the pan.

When the pan is hot, pour a 1/4 cup of the (I use a measuring cup as a scoop) on the pan.  When you see bubbles on the top, flip the fritter over to cook on the other side.  

If you have a big enough pan you can make a few fritters at a time.

Once, cooled, place the fitters in your Tucker tin.  Add a salad or some cut vegetables like carrot sticks or cherry tomatoes.
